Hot Chocolate Snowballs

Image
These delicious hot chocolate snowball cookies have a few surprises inside. First, they are made with hot chocolate mix, meaning you can use a plain mix or jazz things up a bit by using a flavored hot chocolate mix like peppermint. Second, they have a bit of cream cheese mixed into the dough, giving them a great flavor and texture. I tweaked the original recipe just a bit by making the cookies larger and reducing the cooking time. I like my cookies to be tender so this worked out very well. Many thanks to Melissa's Cuisine for the recipe. Enjoy!   Ingredients: 2/3 cup butter, softened 3 ounces regular cream cheese, softened 2/3 cup hot chocolate mix (I used peppermint but plain works great too) 1/3 cup powdered sugar, plus extra for rolling 2 teaspoons vanilla 1-3/4 cups flour 1/4 teaspoon salt Directions : In a large mixing bowl, cream the butter and cream cheese well. The mixture should be thick but smooth. Add hot chocolate mix, powdered sugar, and vanilla. Add in salt...

Chocolate Gooey Butter Cookies

Image
make this recipe. Very soft, moist, tangy and delicious. They taste just as good, if not better, by the second and third day. It is important to note that a stand mixer should be used for this recipe. If you don't have access to one, use a bowl and a wooden spatula. Avoid using a hand mixer at all costs. After reading the reviews of this recipe at Food Network, hand mixers were known to burn out after trying to mix the following ingredients. Chocolate Gooey Butter Cookies Makes about 24 1 (8-ounce) brick cream cheese, room temperature 1 stick butter, at room temperature 1 egg 1 teaspoon vanilla extract 1 (18-ounce) box moist chocolate cake mix Confectioners' sugar, for dusting *I added about 1/3 cup of semisweet chocolate chips to the original recipe* 1. Preheat oven to 350 degrees F. 2. In a large bowl with a stand mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 ho...

Easiest Oreo Cheesecake

I’m going in deep here for a second, so y’all bear with me…  Have you ever thought about about how we, as humans, strive for perfection to the extent that we make things infinitely more complicated?  It’s like our desire to be perfect negates any practical consideration.  We’re always told that that shortest distance between two points is a straight line.  But how often do we actually take that direct path? Sometimes we even give certain parts of our lives their own language, you know… to make things complicated.  When was the last time you went into Starbucks and ordered black coffee?  No, it was a venti, skinny, caramel, macchiato, whatever, whatever… See.  Complicated. Now, on my best day, I try to be the opposite.  I want things to be simple.  I need things to be easy.  My dad always taught me the K.I.S.S. principle – Keep it simple, stupid.  In fact, when I was writing my book, I went back at the last minute and rem...
