German Potato Pancakes Ingredients: 3 russet potatoes (roughly 2 - 2.5lbs) 1 large onion 3 eggs, beaten 1 teaspoon salt Optional: 1/3 cup flour or potato starch Canola oil Applesauce Directions: Step 1.  Peel and grate the potatoes and onion and place in a strainer since they will be very watery. Let them sit for about 10 minutes. You could also ring them out in a paper towel if you are in a rush. It is okay if they are still watery. I have skipped this step all together a couple of times when I was in a real rush. Step 2.  Transfer the potato and onion mixture to a bowl and mix in the salt and eggs. If using the flour, mix that in too. Set aside. Step 3.  Heat a skillet with oil (roughly 1/4 cup). We have a local Polish store where they make their own sausages, smoke their meat themselves and have the most incredible multigrain bread. That’s where I stocked up on the sausage for this dinner. I also added bell pepper, mushrooms, onions, garlic, and herbs. After testing out this recipe a few times, I am finally posting it for all of you. It’s the perfect dinner with lots of hearty autumn flavors. Ingredients : 8 -10 medium potatoes, peeled and cut into 1/2 inch cubes 1 can cream of mushroom soup, undiluted 1 1/4 cups milk 1 envelope ranch dressing mix 1 1/2 cups shredded cheddar cheese, divided salt and pepper 6 slices bacon, cooked and crumbled ⇆ Directions : Add the potatoes to a saucepan. Add water to cover. Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain. Place drained potatoes into a greased 13×9 inch baking dish. Ingredients : Enough peanut oil to wet the entire bottom of your pan 2 tbs unsalted sweet cream butter 1 lb Idaho Russet or Red potatoes (I like Reds – but that is just a personal preference) Salted water ½ medium sized sweet onion like Vidalia Salt and Pepper to taste Garnish with paprika and fresh basil ⇆ Instructions : Place a heavy 9” cast iron skillet over medium heat (just a little more than medium on my electric stove). Details : Servings 6 || Preparation time 15mins || Cooking time 375mins Ingredients : 2 pounds fresh green beans 2 pounds ham 4 baking potatoes 1 large onion, optional 3 cups water Salt & pepper, to taste Preparation : Dice the ham, green beans, onion and potatoes.
