Last week I shared my favorite recipe for homemade strawberry sauce and today I wanted to share a simple way to use it with these mini strawberry cheesecakes. This mini cheesecake recipe is also a perfect base for any kind of topping you prefer to use. You can top these with salted caramel sauce or even just homemade whipped cream and some fresh berries. Since these mini cheesecakes need to chill in the refrigerator overnight, they’re a perfect treat to make ahead of time. Strawberry Glazed Cheesecake This Strawberry Cheesecake features a creamy cheesecake on a graham cracker crust topped with fresh strawberry sauce.   Ingredients 1 ¼ cups graham cracker crumbs 4 tablespoons unsalted butter, melted 1 ¼ cups sugar ¼ cup all-purpose flour 5 (8 oz.) packages cream cheese, over room temperature 1 tablespoon vanilla extract 5 large eggs, at room temperature 1 cup sour cream 2 teaspoons grated lemon zest 1 ½ (16 oz.) packages fresh small strawberries, hulled ¼ cup sugar 1 tablespoon lemon juice 2 teaspoons cornstarch   Directions     Step 1 Make cheesecake: Place a rack in middle of the oven as you preheat it up to 325°F. Butter a 9-inch spring form pan.     Step 2 Stir together 1/4 cup sugar, crumbs and butter. Press into the bottom of the pan. Bake for solid 15 minutes. Use a wire rack to cool. Strawberry Cream Cheese. Icebox Cake! INGREDIENTS  2 pounds strawberries  2 sleeves graham crackers  1 8-oz. package cream cheese, at room temperature  1 14-oz. can sweetened condensed milk  2 3.4-oz. (4-serving) packages instant cheesecake flavored pudding  3 cups milk  1 12-ounce carton cool whip, divided INSTRUCTIONS    Clean and slice strawberries (about 1/4 inch thick); set aside. You have to do this first because the cream cheese mixture will start to set up quickly once it’s mixed up.  Line the bottom of a 3-quart 13x9 baking dish with graham crackers; set aside. Mine easily fit 6 whole crackers then I had to break up a 7th one to fill in the rest.  Combine cream cheese and sweetened condensed milk in a large bowl and beat with an electric mixer until smooth and creamy.  Add pudding mixes and milk and continue mixing on low for 4-5 minutes or until mixture starts to thicken.  Fold in 2 cups cool whip until smooth....

STRAWBERRY CHEESECAKE RECIPE INGREDIENTS 250g double cream yoghurt 2 x 250g Plain Cream Cheese 3 eggs 125ml castor sugar 5ml vanilla essence Fresh strawberry for topping 20ml cornflour Granadilla pulp 75g melted butter 200g tennis biscuits finely crushed METHOD: Crust: Preheat oven 240 degrees Celsius. Mix the biscuits crumbs and butter together and lightly press into the pan. Filling: Break cream cheese into smaller pieces using a fork. Add yoghurt and eggs and beat well until smooth. Add castor sugar,vanilla essence.Sift in cornflour while beating. Spoon mixture onto biscuit crust.Bake for 10 minutes and then lower heat to 110°C and bake for further 30 minutes. Switch off oven and leave to cool in oven. Spread the top with granadilla pulp and top it with strawberries and dust with icing sugar.Refrigerate and Enjoy. Credit: Cooking with Metjie

  Strawberry Crunch Cheesecake Cones Ingredients : Waffle cones Fresh strawberries Coolwhip 8 oz. For the crumbs: Crushed golden oreos Butter Strawberry jello 3 oz. For the filling: 16 ounces cream cheese (softened) ½ cup granulated sugar 2 tablespoons all-purpose flour 1 teaspoon vanilla extract Cool whip 8 oz For the glaze: 1 1/2 cups powdered sugar 3-5 tablespoons heavy cream 1/2 teaspoon vanilla extract Directions : Step 1:  Crush 16 -18 oreos and add 3-4 oz of butter. Bake for 5 minutes. Remove from heat. , crumbs should now be slightly pasty in consistency. Add 3 oz of strawberry jello to the paste and coat the waffle cones. Step 2:  In a large bowl using a hand mixer cream the cream cheese for 3-4 minutes until there are no lumps and it is completely smooth. Be sure to scrape the bowl at least 2 times during this time.
