The Best Crack Cake

Image
I know adding wine to a cake recipe sounds a little odd, but it gives it a terrific flavor! You’ll make this crack cake over and over again – it’s that wonderful! This is the most addictive cake I have ever eaten. My husband and I can polish off the entire cake in one day (or two, if we can hide it from the kids). It is good with coffee, chai, tea, milk, you name it. Great for breakfast, lunch, dinner, snack, and dessert. Or all of the above. When I saw the name of this cake on Pinterest I was curious to read why this was “Crack” cake. I’ve seen Crack Brownies out there and even made our version of them . But cake? I was curious. And was I glad I looked! Just reading the ingredients made me want to make it. It has all kinds of deliciousness packed into it.   I think I cooked it a little too long. I just put an hour on the timer and walked away. I’d suggest checking it after about 50 minutes. Pour over the glaze when the cake is hot. Try it. I dare you to only eat 1 piece. INGREDIEN...

Orange Cranberry Scones with White Chocolate . . .

Image
Orange Cranberry Scones with White Chocolate . . . these tasty scones turn out perfectly tender every time. A favorite scone recipe!   I have been on a scone kick lately. I seriously love the things! They are so easy to whip together, and the flavor combinations are endless. I am sure having fun coming up with  some yummy scone variations. I found a base recipe on the King Arthur Flour recipe website that is absolutely delicious. After you put the dough on the baking sheet , the recipe calls for freezing them for 30 minutes. I tried it both ways, and the slightly frozen scones really do bake up higher and flakier. But if you don’t have the time, they will still be amazing. I added white chocolate, Craisins , and a bit of orange zest to the basic recipe. They turned out super yummy. Like so yummy that I hid a few of them away so that I wouldn’t have to share them with my kids. The sugared tops make them extra tasty, and so pretty! They also freeze really well. I just s...

Chocolate Gooey Butter Cookies

Image
make this recipe. Very soft, moist, tangy and delicious. They taste just as good, if not better, by the second and third day. It is important to note that a stand mixer should be used for this recipe. If you don't have access to one, use a bowl and a wooden spatula. Avoid using a hand mixer at all costs. After reading the reviews of this recipe at Food Network, hand mixers were known to burn out after trying to mix the following ingredients. Chocolate Gooey Butter Cookies Makes about 24 1 (8-ounce) brick cream cheese, room temperature 1 stick butter, at room temperature 1 egg 1 teaspoon vanilla extract 1 (18-ounce) box moist chocolate cake mix Confectioners' sugar, for dusting *I added about 1/3 cup of semisweet chocolate chips to the original recipe* 1. Preheat oven to 350 degrees F. 2. In a large bowl with a stand mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 ho...

Easiest Oreo Cheesecake

Image
I’m going in deep here for a second, so y’all bear with me…  Have you ever thought about about how we, as humans, strive for perfection to the extent that we make things infinitely more complicated?  It’s like our desire to be perfect negates any practical consideration.  We’re always told that that shortest distance between two points is a straight line.  But how often do we actually take that direct path? Sometimes we even give certain parts of our lives their own language, you know… to make things complicated.  When was the last time you went into Starbucks and ordered black coffee?  No, it was a venti, skinny, caramel, macchiato, whatever, whatever… See.  Complicated. Now, on my best day, I try to be the opposite.  I want things to be simple.  I need things to be easy.  My dad always taught me the K.I.S.S. principle – Keep it simple, stupid.  In fact, when I was writing my book, I went back at the last minute and rem...
