sweet sticky chicken wings

Image
Telling you that these chicken wings always go down well is a serious understatement. The first time I made them a couple of years ago, Chris was at work, so I served them up to the kids and got the following responses: Complete silence for the first 10 minutes (except the sounds of frantic chewing/crunching) Eyes rolling back in heads Phrases like ‘you’re the best mummy ever‘, ‘we’re so lucky to have a mummy who’s a food blogger‘ and ‘oh my gosh these are the best things I’ve ever tasted‘ Ingredients: 1/2 cup soy sauce 1/2 cup honey 1/2 cup apricot jam 2 tbsp oil 1 tsp vinegar 2 garlic cloves, chopped 1/2 teaspoon ground ginger 4 lbs. chicken wings & drumettes Directions: In a medium saucepan, whisk together soy sauce, honey, jam, oil, vinegar, garlic, and ginger. Bring the mixture to a boil, then lower heat and let gently simmer for 10 mins, stirring frequently. Preheat oven to 375 degrees F. Place chicken wings, split, into a 9- by 13-inch baking dish. Pour the soy sauce mixture...

School Pizza

Image
My early school years took place primarily in the 90’s, and I remember the cafeteria serving up super cheesy rectangles of pizza on a thin crust every Friday.  Everyone looked forward to Pizza Friday!  As I grew older, I realized that “rectangle pizza” was a more widespread thing that existed in many schools other than my small lil’ educational establishment in East Tennessee.  School Pizza Servings: 8 Ingredients : Crust : 2-2/3 cup flour 3/4 cup powdered milk 2 T sugar 1 package quick rise yeast 1 tsp salt 1-2/3 cup warm water (110-115) 2 T vegetable oil Filling : 1/2 lb Italian sausage 1/2 lb ground chuck 1/2 tsp pepper 1/2 tsp salt 1 (8oz) block mozzarella cheese Sauce (I make the day before) : 1 (6oz) can tomato paste 1 1/2 cups water 1/3 cup olive oil 2 cloves garlic minced 1 t salt 1 tsp pepper 1/2 T dried oregano 1/2 T dried basil 1/2 t dried rosemary Instructions : Crust : Preheat oven to 475. Fried potatoes and onions

Image
Fried potatoes and onions Ingredients 10 small red potatoes or new potatoes, skins left on, rinsed well and cut into bite size pieces 1 large onion, sliced into rings then cut in half 1 bell pepper, sliced thinly in rings like an onion, then cut the rings in half (Be careful when slicing the bell pepper this way) 2 tbls canola or olive oil 1/2 tsp salt 1/2 tsp pepper 1/4 cup shredded sharp cheddar cheese Instructions Place the potatoes in a microwave safe glass bowl. Cover tightly with plastic wrap and poke 4 of 5 holes in the top. Microwave on high for 6 or 7 minutes. When you remove the bowl from the microwave, be sure to use oven mitts. The bowl will of course be hot, but the steam that will come off the food when you remove the plastic wrap can scald unprotected hands. Some of the potatoes may be stuck together. Not to worry, you can break them up while they are frying in the skillet. Just before you remove the potatoes from the microwave, heat the oil in a large skillet over...

The Best Crack Cake

Image
I know adding wine to a cake recipe sounds a little odd, but it gives it a terrific flavor! You’ll make this crack cake over and over again – it’s that wonderful! This is the most addictive cake I have ever eaten. My husband and I can polish off the entire cake in one day (or two, if we can hide it from the kids). It is good with coffee, chai, tea, milk, you name it. Great for breakfast, lunch, dinner, snack, and dessert. Or all of the above. When I saw the name of this cake on Pinterest I was curious to read why this was “Crack” cake. I’ve seen Crack Brownies out there and even made our version of them . But cake? I was curious. And was I glad I looked! Just reading the ingredients made me want to make it. It has all kinds of deliciousness packed into it.   I think I cooked it a little too long. I just put an hour on the timer and walked away. I’d suggest checking it after about 50 minutes. Pour over the glaze when the cake is hot. Try it. I dare you to only eat 1 piece. INGREDIEN...

This post features a picture guide on how to make a delicious Strawberry Cream Cheese Cobbler, a perfect early summer dessert! When searching for recipes, I was hoping to find a picture guide to help me get a quick idea on how to make a cobbler. The visuals are so helpful for me, but I could not find one. So I will provide a picture tutorial in this post. The recipe I used contains pieces of cream cheese, an added bonus. Other types of berries or fruits can be used in place of strawberries, or you can use a mix. I made a couple of smaller changes to the original recipe as I wanted it to be a little bit more flavorful, but...
