SKINNY CHICKEN BROCCOLI CASSEROLE

Image
This skinny chicken broccoli casserole is a lightened up version of my Mom’s yummy creamy cheesy chicken broccoli casserole from childhood. It was one of her favorite recipes for leftover turkey and chicken. And what’s not to like? It’s quick, tasty and economical. She always called it chicken and broccoli casserole or turkey broccoli casserole. But it’s really just a quick and easy version of Chicken Divan, an American classic dish created by NYC’s Divan Parisienne Hotel back in the early 1900s. (Classic Chicken Divan calls for making Mornay sauce, a white sauce to which you add grated Swiss and Parmesan cheese.) It’s delicious, but a little more work than Mom’s quick and easy version that uses cream of chicken soup instead. If you want a skinny chicken broccoli casserole calling for homemade sauce, check out this Lightened Up Chicken Divan from Gina at Skinny Taste. Skinny on Chicken Broccoli Casserole I made this skinny chicken broccoli casserole by using 98% fat-free cream of...

Deep fried Cornish hens

Image
I love Cornish hens: baked or smoked, but also deep-fried. To me they're like smaller turkeys, so they're perfect for entertaining smaller groups or just your family. If you can't find them at your butcher counter, check the frozen-meat section—just be sure to let them thaw out completely. Because of their small size, you can use an electric fryer instead of the larger turkey contraptions for deep-frying them (another bonus). Deep-fried, they've got a golden crust and a juicy, juicy tenderness. If you're short on fridge space, divide the marinade between two or three large zip-top bags, and divide the Cornish hens among them. Press the air out and seal tight; then you can fit them into a smaller space. Now, Shelbi and Gina might share a hen, so for light eaters just split one bird down the middle. But a heavy eater like me will eat a whole hen. I've been anticipating it all day! Ingredients: 2 Cornish game hens, spine removed and cut into piece (breasts, thigh...

CREAMY ITALIAN CUCUMBER SALAD

Image
Creamy Italian Cucumber Salad is the best and made easy with thinly sliced cucumbers and red onions! You’ll love the tangy, creamy dressing! Spring is officially here and I’m looking forward to all of the upcoming potlucks! Mostly I’m dreaming of all the side dishes. I love a good side dish more than a main most of the time. My cucumber salad is what I consider to be a step up from the typical cucumbers soaked in vinegar with white onion. Honestly, not so much my thing. I created this recipe around the dressing entirely, it’s all based on creamy Italian dressing that I love from our local pizza place and wanted to recreate at home! HOW TO MAKE CUCUMBER SALAD: For this cucumber salad, you want to make your dressing first for best results.  I recommend making it 24 hours in advance so that the flavors can develop, so keep that in mind. For the dressing you’ll whisk together your mayonnaise, sour cream, red or white wine vinegar, olive oil, and seasonings.  Then cover and ...
