Skinny Meatloaf

Are you looking for a super yummy, quick dinner to make? If you haven’t tried my skinny meatloaf yet, I think you’re going to love it! It’s low in calories, very moist and has a divinely rich sweet ketchup glaze. It’s a whole lot skinnier than most meatloaf recipes because I’m using an extra lean ground beef, homemade whole wheat bread crumbs and egg whites. By the way, making your own crumbs is really simple to do. The skinny for 1 serving, 214 calories, 5 grams of fat and 6 WW SP. If calculated using WW whole wheat bread for the crumbs, 4 SP. Any leftovers makes great sandwiches! Ingredients : 1½ lbs ground beef (ground shoulder roast is good) 1 slice bread (broken or chopped finely) 1 egg 1 small onion , finely chopped 1 teaspoon table salt ¼ teaspoon black pepper 4 tablespoons ketchup ½ cup whole milk Sauce 4 tablespoons apple cider vinegar 4 tablespoons dark brown sugar, packed firm (to taste) ½ cup ketchup Instructions : ⇆ Instructions : Combine meat loaf ingredients and place into a loaf baking dish. Smooth out top. Sauce: Combine sauce ingredients and pour on top and sides of meatloaf. Bake at 350°F about 1 hour to 1 hour 15 minutes or until done. 170F with a meat thermometer.

Ingredients : 1 Tbsp butter 1 tsp olive oil 1 lb. ground beef 1/3 green bell pepper, minced 1/2 large yellow onion, minced 3 cloves garlic, minced 1 Tbsp tomato paste 2/3 cup ketchup 1/3 cup water 1 Tbsp brown sugar 1 tsp yellow mustard 3/4 tsp chili powder 1/2 tsp Worcestershire sauce 1/2 tsp kosher salt 1/4 tsp red pepper flakes (optional) 1/4 tsp black pepper dash of hot sauce (optional) Instructions : Step 1 Heat butter and oil in large skillet over MED/MED-HIGH heat.  Step 2 Add beef and brown, breaking apart into crumbles as it cooks, about 5 minutes. Drain. Step 3 Add onion and bell pepper to same skillet and cook 2-3 minutes, until soft. Ingredients: -2 lbs of chicken breast cut into strips -2 eggs -1/2 stick of butter, melted (or a whole stick if you really want to be liberal with the butter) -1 cup flour (I used whole wheat) -1 cup panko crumbs (you could also use crushed up corn flakes or rice cereal) -salt, pepper, some of your favorite spices (I used garlic powder, paprika, parsley) Directions : Preheat oven to 400F. Get a large baking pan and grease it really well or you will end up with the chicken sticking. Set out four small bowls. Put the two beaten eggs in one, flour in the next, bread crumbs in the third, and the melted butter in the last one. Form an assembly line of bowls in this order: 1. Chicken 2. Butter 3. Flour 4. Egg 5. Panko crumbs 6. Baking pan Coat the chicken in the above order and lay on greased pan. Bake for 30-45 min or until outside is crispy and when cut open, chicken has no pink. Enjoy!

Ingredients : 2 large, skinless chicken breasts, halved through the middle 2 eggs, beaten 75g breadcrumbs 75g Parmesan, grated 1 tbsp olive oil 2 garlic cloves, crushed half a 690ml jar passata 1 tsp caster sugar 1 tsp dried oregano half a 125g ball light mozzarella, torn Directions : Place the chicken breasts between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Dip in the egg, then breadcrumbs, mixed with half the Parmesan. Set aside on a plate in the fridge while you make the sauce. Heat oil and cook garlic for 1 min, then tip in passata, sugar and oregano. Season and simmer for 5-10 mins. Heat grill to High and cook the chicken for 5 mins each side, then remove. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Combine the flour with the garlic salt, pepper, poultry seasoning and paprika in a big plastic bag. Put the chicken in the bag, seal it and shake to coat it. Butterscotch Cake with Caramel Icing

I found this Butterscotch cake in a collection of my Great-Grandmother's old recipe cards. I love to try out these vintage recipes, because they are often for goodies that nobody seems to make anymore. I have never heard of Butterscotch cake, so I thought I'd try it out. Pairing it with the caramel icing (a separate recipe found among the old cards) was my idea - I have no idea which frosting she would have put with this cake. I love the icing even more than the cake itself, and I think next time I will try it with a standard butter cake. Caramel Icing is a wonderful treat and another one of those old things that fell out of favor but now is making a comeback. It actually tastes more like penuche or praline candy than the gooey caramel we think of nowadays. It dries and sets into a coating that is very different from other types of frosting - not fluffy or creamy, but almost like a thin layer of brown sugar fudge on a cake! Poor Man’s Stew Recipe

Ingredients : 1 lb. ground beef, browned and drained 1.5 lbs potatoes, diced large 3 carrots, sliced 1 onion, diced 1 garlic clove, minced (I had this on hand already) 1 (6-oz.) can tomato paste 2 cups water 1 tsp. salt ¼ tsp. pepper 1 tsp. onion powder 1 tsp. dried oregano Directions : Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker. In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and oregano. Pour this mixture over everything in the slow cooker. Stir. Cover and cook on LOW for 6-7 hours, without opening the lid during the cooking time. Serve with buttered sandwich bread.

Garlic brown sugar chicken

Ingrediens : 2-4 boneless skinless chicken breasts or legs. 4 minced garlic cloves. 4 tbsps of brown sugar. 3 tsps of olive oil. Directions : Sauté the garlic with oil in a small sauté pan until tender, turn off the heat and stir in the brown sugar. In a lightly greased casserole dish, place the chicken breasts and cover with the garlic and brown sugar mixture. Season with salt and pepper. In a preheated oven to 500° bake for 15 to 30 minutes and enjoy!

Sprinkle yeast over very warm water in large bowl. Stir until yeast dissolves. Leave to foam about 10 minutes. 2.
